CHOP owners Eric Finley and Paula Markus-both seasoned chefs, butchers, and charcutiers-source their meats with great care. The provenance of any given animal will be readily available to you, often with a colorful backstory of the farmer who raised it, the feed upon which it was finished, and the day it came in.
